Mrs. Bascom's Brunswick Stew

(in this case, Mrs. Bascom is my mother-in-law)

In a large pot, boil:
- a chicken (whole fryer)
- a chunk of bone-in smoked ham (country ham/ham bone/smoked ham) - can get it at the deli counter or in the meat case - ask if you don't see it, most places carry it - at our grocery store, its by the 'smoked ham' section of the meat counter
- half an onion (corsely chopped)
- a carrot (cut in half or however, to fit)
- several celery tops

* boil until chicken is done - leg will come apart when you pull on it (usually an hour or so?) - drain, saving the broth - refrigerate overnight
* set aside chicken and ham (discard veggies) - it is easiest to 'pull apart' the chicken when it is warm, I let mine cool for a while and then pull it apart into bit-size pieces and discard the bones/skin/fat - also cube or pull apart the ham, discarding the bones/fat

next day:
- remove broth from fridge and skim fat off before continuing (should fill about half of your large pot)
* heat on stove and add:
- 28 oz. can chopped/diced tomatoes
- an onion (chopped)
- 4 potatoes (cubed)
*cook until tender

add:
- small bag (16 oz.) frozen lima beans
- small bag (16 oz.) frozen corn
*cook until heated through

add:
- chicken
- ham
- salt & pepper (to taste)
- 1/2 stick butter
- 1 TBS sugar
- dash tabasco sauce
*cook until butter is melted, meat is warm

YUM - enjoy :)
