This recipe is pretty simple (i.e. not a lot of measurements). Just make it how you'd like it!
Peel and cube 10 potatoes. Boil potatoes in 2 cups chicken broth. In another pan, saute some onion and celery. When potatoes are soft, add the onions and celery and simmer about 15 minutes. Add 1/2 pint half & half and 1 cup milk. To thicken the soup, remove a few potatoes, mash them, and incorporate back into the soup.
Serve topped with bacon, green onions, and Monterey Jack cheese!
